Though I usually prefer traditional eggplant baba-ghanouj* rather homestyle and lumpy, this red beet version with its stunningly gorgeous fuchsia color looks more beautiful when pureed until velvety. (Hint: The vivid color is from phytonutrients naturally found in beets, called betalains, which have anti-inflammatory and antioxidant abilities!)
*The baba ghanouj, which its main ingredient is eggplant, is a traditional Lebanese dish typically served as part of the mezze (starters) or as a dip. We added a piece of boiled beets just to give it this great red velvet color and to add and packed with essential nutrients, beetroots are a great source of fiber!
Spread it on pita bread, or use it as a dip for fresh vegetables such as carrots, and cucumber, and for meat lovers try it on kebabs or grilled chicken!
