Hindbeh ~ Lebanese-style sautéed dandelion greens with caramalized onions🌱

Wilted greens topped with caramelized onions is a Lebanese starter must. Bitter dandelion greens are the most flavorful, but chard or kale—really any green or a combination of them—taste delicious.

Serves: 4
 
📝INGREDIENTS:
2 bunches of Dandelion or chicory greens
3 medium onions chopped sliced
2 tbs canola oil
3 tbsp olive oil
1 1/2 tsp salt or as desired
2 lemon juice
4 garlic cloves minced
 
INSTRUCTIONS:
🥘 Bring a large pot of water to a boil over high heat. Cook greens until tender, about less than 10 minutes. Transfer to a colander to drain and cool. When cool enough to handle, place in a large clean dish towel and squeeze until WELL dry.
 
🥘 While the greens cool, dry the pot. Add oil and heat over medium-high heat until shimmering. Add sliced onion and cook, stirring occasionally, until starting to brown, 2 to 3 minutes. Reduce heat to medium and continue cooking, stirring occasionally, until golden and crispy, 5 to 8 minutes more. Transfer to a paper-towel-lined plate with a slotted spoon.
 
🥘Mix the greens with the minced garlic cloves, lemon juice, olive oil, and salt. Top it with the fried onions.
